Here is my feeble attempt at this co*cktail more than five years ago. Y’all, let’s thank the Lord for growth to know when something you create isn’t all of that, shall we?

Anyone who knows me can attest to the fact that I am not a large drinker. In fact, wine is about as strong as I go these days, mostly out of the stigma that comes from a church girl indulging in alcohol, but also compounded with the fact that I just don’t like the way a lot of alcohol tastes.

So when I was offered the opportunity to review Goslings Black Seal Rum, I mulled it over for a while until I saw the recipe in full, and realized that I would be working with less alcohol in comparison to other ingredients. Suffice to say, it still took me almost three months to make the darned co*cktail, because frankly, I didn’t know where to go and pick up the Rum in the first place. Years later, I’m more knowledgeable, but I’m still always open to learning and creating. I also know some great bartenders who are able to guide me through the process, and this update is the result of that.

After a web search and a couple of phone calls to various beverage depots, I found a spot that was close to us and relatively inexpensive (did you know that bottles of alcohol are as expensive as they are?! SHEESH!) I gathered all of my ingredients to bring forth this co*cktail.

Chef Ming Tsai happens to be the inspiration behind this drink, as he is the first person I saw who referenced it, but I realize he’s not the creator. When I shared this initially, someone looked me in the face deadpan and said – you mean, a Dark & Stormy? Besides, I had enough of making moonshine several years ago – which you can start NOW for holiday gifts next year.

You’ll need, Goslings Black Seal Rum, Ginger, Sugar, Limes, Club Soda or Ginger Beer, and Orange Juice.

I was able to make Ginger simple syrup, and it’s YUMMY! I can totally see making spritzers with just that and the club soda, but I digress.

OR you can use Ginger Beer if you don’t have time or energy to make ginger simple syrup.

The neat thing about this drink is that it’s layered. Simple syrup on the bottom, club soda or ginger beer, orange and lime juices in the middle, and finally flourished with rum floating on top. Don’t forget the candied ginger and lemon/lime wedges for garnish!

The first time I made this co*cktail, I did more of a southern feel with my drink, serving them up in mason jars, and I must say, it still packs a punch. I’m sure that those who are a little more well versed in drinks that can put a little bit of hair on your chest, would think that the way that I prepared it was slightly weak, but for now, that’s about all I can take. With this updated version, we’re showing them in rock glasses – which are usually used to serve whiskey straight up or variating co*cktails.

Of course, I think that this would be a great addition to your NYE celebration, a barbecue with friends, or even a nice fall evening sitting around your fire pit – if you have one. It’s easy to make, and your friends will be impressed with your bartending skills.

Recipe is as follows:

Ginger Syrup and Candied Ginger

Ice

Club Soda

Orange Juice

Goslings Black Seal Rum

Lime Juice

Fill glass almost full with ice and then club soda or ginger beer

Take two tablespoons of the ginger syrup and pour it down the sides of the glass so that it settles on the bottom.

Add 4 teaspoons of orange juice and juice of half of a lime to the mixture. Do not stir

Carefully ‘float’ two tablespoons of the Goslings Rum on the top of the drink.

Garnish with a lime wedge and some candied ginger and serve. Tell your guests to stir their drinks before enjoying!

A Dark ’n’ Stormy is a highball co*cktail made with dark rum and ginger beer served over ice and garnished with a slice of lime. Perfected by the use of Goslings Dark Rum and Ginger Beer.

Ingredients

  • Ice cubes or crushed ice
  • 2 quarts club soda, or 4 cans of Ginger Beer well chilled
  • 1/2 cup (4 ounces) fresh orange juice - about 2 large oranges
  • Juice of 3 limes, plus 1 lime, cut into 6 wedges, for garnish
  • 3/4 cup (6 ounces) Goslings Black Seal rum

Instructions

    1. Fill a tall glass almost full with ice and then with club soda.
    2. Pour 2 tablespoons (1 ounce) ginger syrup down the side of the glass to create a layer of syrup on the bottom.
    3. Add about 4 teaspoons (about 2/3 ounce) orange juice and juice of 1/2 lime.
    4. Carefully add 2 tablespoons (1 ounce) rum, floating it in a layer on top. Three distinct layers, the syrup, the club soda, and citrus juice, and the rum, should be visible.
    5. Garnish each glass with a lime wedge and a slice of candied ginger hanging over the rim, or a few ginger slices skewered on a co*cktail pick or free-floating.
    6. Serve each layered drink with a straw and tell your guests to mix layers with a straw before drinking.
