This Grasshopper Pie recipe is a simple and easy chocolate mint dessert – perfect for Christmas or St. Patrick’s Day!

My sister-in-law introduced me to this light and fluffy chocolate mint dessert a long time ago. What an unfortunate name it has… If “Grasshopper Pie” is just too off-putting to you, I hereby give you permission to call it Fluffy Chocolate Mint Dessert.:)

Thisis one of those recipes that multiplies well. It can be madepie-sized (like this recipe will be), or bedoubled to fit in a 9 x 13 inch pan. Or, if the event being served is the size of an army, the basic recipe can bemultiplied to fit into commercial-sized pans, too.

How to Make Grasshopper Pie

Ingredient List:

  • 1 1/4 cup crushed oreo cookie crumbs (or 17 cookies, crushed)
  • 3 Tablespoons melted butter
  • 28 jumbo marshmallows
  • 1/2 cup milk
  • mint flavoring
  • green food coloring
  • 1 cup whipping cream
  • 1 tsp. vanilla
  • sugar, to taste

Step 1: Make the oreo cookie crust

Mix the melted butter with oreo cookie crumbs and press into the bottom of a 9 x 9 square pan, or on the bottom and up the sides of a pie pan. Reserve a few to sprinkle over the top. Chill in the refrigerator to set.

Step 2: Melt the marshmallow mixture.

Add milk to the marshmallows and melt together in the microwave. Times vary based on strength of microwaves. I start with 1 minute, and stir after every interval until they are fully melted.

Add in green food coloring and mint flavoring to taste. Start with a little and add more as you wish. You can always add more, but you can’t take it away!;)

Place the warm marshmallows in the refrigerator to cool slightly as you mix the whipped cream.

Whip the cream, adding sugar and vanilla to taste.

Fold the whipped cream into the cooled marshmallow mixture.

Pour filling onto the oreo crust, and sprinkle some oreo crumbs on top.

Cool well before cutting and serving.

Delicious!

This recipe can be made ahead, covered with saran wrap and chilled in the fridge until ready to use.

To make for a larger group, double the recipe and make it in a 9 x 13 inch pan. Serve as square servings with a dollop of whipping cream on the top.
