Keto Bacon And Blue Cheese Zoodles Ingredients
- 6 bacon slices
- 2 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
- 1 tomato, diced
- 4 cups zucchini noodles
- 1/2 cup crumbled blue cheese
- 2 basil leaves, sliced
Keto Bacon and Blue Cheese Zoodles Directions

Cook bacon
In a large skillet, cook bacon over medium high heat until crisp. Set aside. Cut into crumbles once cooled.

Sauté garlic
Remove all but one tablespoon of bacon grease from the skillet. Over medium heat, add olive oil and garlic cloves. Sauté until fragrant, about 1 minute.

Add tomatoes
Add diced tomatoes and cook until softened, about 3 minutes.

Cook noodles
Add zoodles to the skillet and cook for 2 minutes until sauce has incoorperated over the zoodles and the zucchini noodles are heated through but still firm to the touch.

Finish the dish
Turn off the heat, add blue cheese crumbles and basil. Season with salt and pepper. Serve immediately.

There are other low carb noodles options hitting the market. One of the more popular keto noodle replacements out there are shirataki noodles. Shirataki noodles are made from the konjac yam and contain water and glucomannan, a water soluble fiber. Shirataki noodles make an excellent noodle replacement because they are ZERO carb, unlike zoodle that do have carbohydrates.Shirataki noodles don’t have much flavor to them so they will take up the flavor of the dish they are made with. They need to be cooked correctly according to the package directions. When you first open the package, shirataki noodles stink! Meal Prep Option
I am always on the lookout for easy keto lunch recipes that I can take to work. This is one of them. You can meal prep this keto zoodle recipe ahead of time. Since zucchini noodles can get mushy overtime, I recommend not adding the zoodles to the dish if you plan to eat this dish over the course of a few days. Make up the sauce separately. When you pack your lunch in the morning, pour the sauce over you cooled, uncooked zoodles. At lunchtime, heat the dish in the microwave for two minutes. This will cook your zoodles without being too mushy.
